Bold cheddar, bacon, and jalapeños melt together for a spicy, savory twist on the classic sandwich.
# What You’ll Need:
→ Dairy
01 - 4 slices cheddar cheese or Monterey Jack
02 - 2 tablespoons unsalted butter, softened
→ Breads
03 - 4 slices sourdough bread or preferred sandwich bread
→ Meats
04 - 4 slices smoked bacon
→ Vegetables
05 - 1 to 2 fresh jalapeños, thinly sliced, seeds removed for less heat
→ Pantry
06 - 1 tablespoon mayonnaise, optional for extra crispiness
# How to Make It:
01 - In a skillet over medium heat, cook smoked bacon until crisp. Transfer to a paper towel-lined plate to drain.
02 - Spread softened unsalted butter evenly on one side of each bread slice. Optionally, spread a thin layer of mayonnaise on the other side for additional crispiness.
03 - On the unbuttered side of half the bread slices, layer one cheese slice, crumbled crispy bacon, jalapeño slices, and another cheese slice. Top with remaining bread, ensuring buttered sides face outward.
04 - Preheat a second skillet or griddle over medium-low heat. Place assembled sandwiches in the skillet and cook for 3 to 4 minutes per side, pressing gently with a spatula, until the exterior is golden and cheese is thoroughly melted.
05 - Remove sandwiches from skillet. Allow to cool briefly, then cut in half and serve while warm.
