Grilled Peaches Coconut Whip (Print Version)

Caramelized grilled peaches served with vanilla coconut whip and chopped pistachios for a light, fresh dessert.

# What You’ll Need:

→ Fruit

01 - 4 ripe peaches, halved and pitted

→ For Grilling

02 - 2 tablespoons maple syrup (or honey for non-vegan option)
03 - 1 tablespoon melted coconut oil

→ Coconut Whip

04 - 400 ml can full-fat coconut milk or coconut cream, chilled overnight
05 - 2 tablespoons powdered sugar, or to taste
06 - 1 teaspoon vanilla extract

→ Garnish

07 - 1/4 cup unsalted pistachios, roughly chopped

# How to Make It:

01 - Preheat a grill or grill pan to medium-high heat.
02 - Brush the cut side of each peach half with melted coconut oil and a light coating of maple syrup.
03 - Place peaches cut side down on the hot grill. Grill for 3 to 4 minutes until caramelised and marked. Flip and grill the skin side for another 2 to 3 minutes. Remove from heat and set aside to cool slightly.
04 - Scoop the solidified coconut cream from the chilled can into a mixing bowl, reserving or discarding the liquid as desired.
05 - Add the powdered sugar and vanilla extract to the coconut cream. Whip with a hand mixer or whisk until light and fluffy. Taste and adjust sweetness as needed.
06 - Arrange grilled peaches on serving plates, top with a generous dollop of coconut whip, and sprinkle with chopped pistachios. Serve immediately.
